This easy egg salad salad sandwich recipe is delicious, nutritious and tasty! We use celery for a yummy crunch, but you can add the addition of onion for an extra bite, too!

There are certain nights of the week where my husband and I get home late from work. On those nights, we need something simple and tasty for dinner. Typically, I can make this egg salad with celery ahead of time, either the night before or the morning of. It comes together in less than 20 minutes and it gets better the longer it sits!
Yes, we could absolutely grab takeout on these late work nights, but I always finding that eating at home makes us feel SO much better.
Eggs are great source of micronutrients, healthy fats and protein. I use avocado mayonnaise in this recipe for some additional healthy fat.
You can add any type of greens on this sandwich, bean sprouts would be yummy! My husband loves to add a slice or two of cheese.
We always toast up our bread – this bread is sourdough. I do have a sourdough starter and I do dabble in sourdough bread making, but this bread is a sourdough loaf I purchased from Aldi.
If you love raw onion, those are also a great addition to this sandwich. I didn’t have any on this particular day, but I would’ve added them if I did!
Why should I be eating eggs?

Eggs are an excellent source of protein and fat. Here are some additional health benefits of eggs:
- They provide NINE essential amino acids necessary for the body’s growth and maintenance.
- They contain important vitamins and minerals such as vitamin D, B, B12, phosphorus, and selenium.
- They’re an EXCELLENT source of choline, which is great for baby during pregnancy.
- They’re great for your eyes, helping to prevent macular degeneration, cataracts and age related blindness.
This is just a short list, but long enough to make eggs a staple in our diets!
Variations of this Egg Salad Sandwich
- You can add paprika or smoked paprika to this egg salad mixture instead of sprinkling it on top like I did.
- Put the egg salad in a wrap with some lettuce for an easy on-the-go lunch!
- Add in some avocado to boost the healthy fats.
- In place of mayo, you could use some plain greek yogurt.
- Don’t want to use eggs? Try cubing up some tofu for a high protein alternative!
- Serve with some crackers or celery, kind of like a dip instead of on bread!
How long will egg salad keep in the fridge?
Egg salad will keep in the fridge for 4-5 days in an air tight container. I tend to find that if I make it the night before I plan to eat it, giving it those few hours to sit really makes a difference in the flavor!
How did you hard boil your eggs?

I used to hard boil my eggs the standard stove top way. However, my fool proof way of hard boiling eggs is by using my Instant Pot! I use a 4 – 4 – 4 method.
- Pressure Cook for 4 minutes
- Natural Release 4 minutes
- Ice Bath 4 minutes

Easy Egg Salad Sandwich with Celery Recipe
Equipment
- Pressure Cooker OR
- Stove Top Pot
Ingredients
- 6 eggs
- 1/3 cup celery about one large stalk, diced
- 1 bunch lettuce to add to your sandwich
- 1/3 cup mayonaise I used avocado mayo
- 1/2 tsp mustard
- 1/4 tsp lemon juice
- 1/4 tsp dill I used dry, but fresh would be fantastic!
- 1/8 tsp paprika
- salt and pepper to taste
- bread of choice
Instructions
- Hard boil your eggs. While your eggs are boiling, chop your celery (and onion if you'd like to add some). Get out all other ingredients.
- Peel your eggs and add to a bowl
- Combine all ingredients except for the paprika, lettuce and bread
- Salt and pepper to taste. I used paprika for garnish, but you can absolutely add it in if you'd rather!
- Assemble your sandwich with lettuce, bread and enjoy!
